Production and quality

The fish are caught and brought on board while still alive. They are then bled for a minimum of 30 minutes before being headed and gutted, and finally frozen whole in blocks. This process takes between two and four hours which means that the fish is frozen pre-rigor ensuring the finest superior quality and freshness when the fish reaches customers.
